Let’s start making mozzarella cheese right away. You’ll need a milk pasteurizer, sour milk, water, salt, citric acid, and cheese culture. This video guide will help you to set up the pasteurizing device and prepare all necessary ingredients:

Before putting a container with milk into the pasteurizer, make sure the milk has a level of acidity up to 4.6. This can be achieved by adding citric acid to it. The pasteurizer will heat up the milk to 72°C, and then cool it down to 30-35°C. This is how the pasteurizing process works.

To produce cheese, you’ll need to add cheese culture – 2 drops per liter of milk. Mix it properly at once. Thereafter, cover the pasteurizer with a cap and leave it working for 30-40 minutes. Cheese clot will be formed during this time. When it’s ready, cut the clot into several parts and leave it for a couple of minutes.

After that, the cheese substance should be warmed up to 42°C. Keep mixing it all time until it can be dragged and stretched. Start extracting the mass with a sieve. When it’s drained out, put it together and cut into several pieces of a similar size.

At the next step, you’ll need a salty ice serum containing 3 tablespoons of a salt for 2 liters. Take a chunk of cheese and put it into water warmed up to approx. 45°C. Stretch and mash it well until you make sure its texture becomes sleek. Repeat the procedure with the remaining chunks of cheese. Put all cheese balls into hot water again when they become hard. At the end, the cheese needs to be soaked into brine for 12 hours.
